Fresh Rock Oysters, with a Passion and Lime dressing

Serves: 4
- 1 dozen Fresh Rock Oysters
- 1 ripe passion fruit
- 2 limes
- ½ tbsp smoked paprika
- 2 tbsp of chopped coriander
- A splash of olive oil
- Salt & Pepper to taste.
- Squeeze out the pulp & seeds of the passion fruit into a bowl.
- Strain the seeds away through a sieve, to leave you only with the juice and pulp.
- Squeeze the juice of the 2 limes into the passion fruit juice
- Add the Olive oil
- Add the paprika and coriander and whisk all together till it combines nicely.
- Place the open oysters on a bed of ice and serve with the dressing.
- Enjoy with a glass of ice-cold crisp Champagne!
